SAMBEL OELEK
Preparation Time : 10 minutes
Cooking time : 15 minutes
Serves : 1 cup
Ingredients :
200g small red chillies
1 cup of water
1 teaspoon salt
1 teaspoon sugar
1 tablespoon vinegar
1 tablespoon oil
- Remove stalks from chillies, chop chillies roughly. Combine in a pan with water, bring to boil. Reduce heat to low, cover and simmer for 15 minutes
- Pour chillies into a food processor, add salt, sugar, vinegar and oil, and blend until finely chopped
- Store sambal in a small glass jar (with non-metallic lid) in a fridge for up to 2 weeks
Note: Wear rubber or cotton gloves when handling chillies to ovoid any contact with your skin
The seeds are the hottest part in the chilli. They might be discarded, depending on your taste
CUCUMBER RELISH
Preparation Time : 10 minutes
Cooking time : nil
Serves : 4
Ingredients :
1 large cucumber
1 tablespoon of palm sugar
2 tablespoons vinegar
½ teaspoon salt
1 tablespoon chopped mint
- Peel the cucumber, halve lengthways, scoop out seeds. Thinly slice the cucumber, crossways
- Combine sugar, vinegar, salt and mint. Pour over cucumber. Serve as accompaniment
