NASI GORENG

Ingredients :
500g medium size prawn
2 chicken thigh fillets
2 eggs
3 tablespoons peanut oil
1 large carrot, cut into fine julienne strips
1 cloves of garlic, crushed
1 teaspoon sambal oelek
1 tablespoon dark soy sauce
4 cups cooked rice
4 spring onions, sliced on diagonal
Spring onion and red capsicum cut into strips and curled
- Peel and devein prawns. Slice chicken fillets into thin strips
- Beat eggs with fork until blended. Heat 1 tablespoon of oil in frying pan, pour in eggs, cook over low heat until eggs have set, lift out. When the omelette is cold, roll it up, slice thinly
- Heat remaining oil in frying pan, add prawns, chicken, carrot and garlic, stir-fry until browned.
- Add sambal oelek, soy sauce, rice and onions, stir-fry until heated through. Serve garnished with omelette strip and spring onion and red capsicum curl.
Note: You will need to cook 1,5 cups of raw rice. Cooked rice should be cooled before using for fried rice, this prevent glugginess
To curl spring onion and capsicum, cut into fine strips and place in iced water, refrigerate |
