Dear friends,
One year is finishing…. On behalf of Arnaud, Kadek, Gita, Titin, Agus, Coral, Wayan and Kalin, I wish you a merry Christmas and a happy new year 2006.
To answer to your demand, you will find in the Bali News section the recipe of the Balinese chicken Kebab with peanut sauce: Satay Ayam. On the Bio section and photo of the month, I will present the very colourful Mandarin fish.

BALI NEWS

PEANUT SAUCE
Ingredients: ½ cup unsweetened peanut butter, 2 tsp light brown sugar, ¼ cup brown rice vinegar, 2 tbl chopped cilantro or chives or scallions, 2-3 cloves minced garlic, 1-2 tbl soy sauce, 1tsp chilli oil or chilli powder or paprika, ¼ - ½ cup of warm water
1. Over medium low heat, whisk together everything but the water. Add ¼ cup of water and taste.
2. Adjust seasonings, then gradually whisk in more water until desired consistency. Serve
3. Peanut sauce thickens as it warms up, so you may need to add more water if you don’t serve it right away.

SATAY AYAM
Ingredients: 2 chicken breast, 1tbl vegetable oil, Bamboo skewer, 2 shallots, 2 garlic cloves, 1tsp coriander, ½ inch fresh turmeric, 1tbl tamarind sauce (from 1 tbsp of tamarind dissolved in 1tspn water), salt to taste, palm sugar.
1. Cut the chicken into small cubes and set aside in a bowl
2. Using a food processor, blend the garlic, shallots, coriander, turmeric, tamarind sauce, salt and palm sugar to form a paste
3. Pour the vegetable oil and the blended ingredients into the bowl filled with chicken breast cubes. Mixed them and set aside for half an hour.
4. Put 4 to 5 pieces of chicken cubes on each skewer. Grill the chicken on both sides until well done. Serve with peanut sauce.

The mandarin fish is a very shy fish difficult to spot… It has a complex colour pattern with orange, blue and green stripes all over the body, recalling the ancient Chinese Mandarin dresses where it has named.
CLASSIFICATION
Family: Callionymidae
Genus: Synchiropus
Species: Splendidus
WORLD HABITAT
Distribution: Indonesia, New Caledonia, New Guinea to Philippines and Japan.
Locally common but difficult to find, this rarely seen fish occurs on fringing reefs, in dense coral heads around continental island adjacent offshore barrier reefs. It generally occurs in groups.
FEEDING BEAHAVIOR

Feed on zooplankton and small copepods for which they are constantly hunting.
REPRODUCTION

The male mandarin fish is larger (6cm) than the female (5cm) and has a spiked dorsal fin. Female get along, whereas males do not. When male encountered each other they display by raising their spiked dorsal fin, hoping to frighten off the other male. If neither backs off, they fight, sometimes to death. Encounters that result in fights occur more often just prior to the daily mating ritual at dusk. Mandarin fish have a complex social structure and mating system.
Daily at dusk, for about 10 minutes Mandarin fish mate. During this mating period, Mandarin fish are almost, but not quite oblivious to what is going on around them. Group of mandarin gather together and male and female pair off, rising into the water column together until the female releases eggs and the male fertilizes them. Larger male are more successful than the smaller males in capturing female interest. Smaller males have developed a compensating technique of rushing up to mating pairs and releasing sperm hoping for a random fertilization to occur.
The eggs float and hatch after 7 days, larvae are planktonic. The percentage of larvae, which arrive to the adult stage, is very small.
